
Last night we made Sweet Potato and Black Bean Enchiladas (Thank You! Gluten free Goddess!) They were divine, and I can not wait to try some more of the recipes on your blog.
My husband has started a website called "Brilliant Curry" he is all about Curry, and would love to start a curry house in Arizona (similar to those found in England) that only offers curries, many different curry options. We are pretty sure this one would be on the menu- Its similar to the America's Test Kitchen version, only we changed it from shrimp to chicken and tofu in this bowl. We will however be making it just tofu next time, because honestly, I picked around the chicken chunks and Will said it would have been just as tasty without them, too!
There is an awesome restaurant in the Phoenix Metro area called Udupi Cafe it serves vegetarian Indian food, and actually quite a bit of it is vegan! It was quite tasty when we went, and would love to take spread the word about it!
I am so tired of my usual boring menu of roasts and stews and generic chicken dishes, so this is a journey I am excited to be on! Bring on the curry leaves and green chiles! I am all about trying something new!

Mmmm, I love curry, and haven't had it in ages. Actually, never tried to make it myself, but my mom makes a good dish of curry! I'll have to call her for the recipe!
i can just imagine me telling Uncle John that I am going to cook a vegetarian meal - he's all about the meat. sweet potato enchilada's sound very interesting - might have to look a little closer at that recipe.
